This cleanse-friendly soup is wonderful. Fresh, nourishing and savory to taste…and it can easily be made with fresh arugula or watercress.
Serves 4
Ingredients
1 large head broccoli, chopped
1 large yellow onion, chopped
2 cloves garlic, diced
1 T. olive oil
2 c. water
1 c. low sodium vegetable broth
1 c. fresh arugula
1/2 c. fresh spinach
juice of 1 lemon
salt & pepper to taste
Directions
Warm olive oil in a medium saucepan over medium heat. Add onion and garlic and sauté for 3-4 until garlic begins to soften and appear translucent. Add the broccoli and sauté for 4-5 minutes until florets appear vibrant green. Increase heat to high and add water, broth, some salt and pepper. Once it is boiling, reduce heat to low, cover, and simmer for 7-10 minutes, until broccoli is just tender. Remove from heat.
Transfer soup in batches to blender, blending on high with the fresh arugula and spinach until smooth and creamy. Serve immediately with a bit of fresh lemon juice, and enjoy!
