This is a delicious, incredibly fresh, and SUPER cooling cilantro and white bean dip, perfect for eating with fresh vegetables or as a spread on a freshly baked slice of spelt bread.
Ingredients
1 c. cooked white beans
1/4 c. fresh cilantro, chopped
1 t. olive oil
Directions
Place all ingredients in a blender and blend on high until smooth. Season with salt and serve with cucumber, carrots, celery or fennel. Store in the fridge up to 5 days.
