Rich, tangy lemon perfection.
Ingredients
1 C. + 1 T. raw cashews
1 T. honey
1 T. agave nectar
1 T. coconut oil
1 T. vanilla extract
Pinch of sea salt
Juice of 2 lemons
Zest of 1 lemon
2 T. filtered water
1-2 T. freshly squeezed orange juice
Directions
Soak cashews overnight in filtered water, then drain and rinse once you are ready to begin preparing your dessert.
Place all ingredients in blender blend until smooth.
Pour cream into bowl or tupperware and place in refrigerator to chill for at least 2-3 hours. (If you place in freezer, the cream will take on the consistency of an ice cream instead.) Remove when ready to serve, and sprinkle with lemon zest. Enjoy!
