A lovely, light dessert than can easily be made with whatever delicious fruit is in season.
Ingredients
1 banana
1 c. fresh or frozen raspberries
7 oz. coconut cream
1/4 c. unsweetened coconut milk
1 T. coconut oil
1 t. vanilla extract
1 T. honey or agave nectar
1/4 c. chia seeds
Directions
Place all ingredients except chia seeds into a blender and blend on high until completely smooth. Pour mixture into a glass or bowl with the chia seeds and stir well to combine, making sure no chia seeds are trapped at the bottom. Place in the fridge to chill for at least 4 hours or overnight, until the mixture’s consistency is thick and creamy. Serve with fresh or frozen raspberries on top.
