Beets are so sweet, delicious, and super healthy…they make the perfect chips. Only thing to note about making chips, try to slice whatever vegetable you’re using as thin and evenly as possible for a beautiful, evenly cooked, crispy chip. (And of course, be safe and cautious when thinly slicing anything!)
Ingredients
2-3 raw beets, peeled and thinly sliced
1 T. olive oil
2-3 sprigs fresh rosemary, chopped
salt to taste
Directions
Preheat oven to 375 degrees F.
Drizzle olive oil over 2 baking trays and sprinkle with salt and fresh rosemary. Add beet slices to tray and toss to coat. Spread them out in single layer (no overlapping!) on the tray.
Place baking trays in oven on center racks to cook for 15-20 minutes, until crispy. Keep an eye on your chips during the last few minutes baking, because they can burn quickly. Remove from oven and use paper towels to soak up any excess oil on the chips. Let cool before serving. Enjoy!
