…Inspired by the beautiful city of Copenhagen, this is my super easy, super delicious version of a rye bread. A dense, satisfying, hearty rye bread is a breakfast staple in the Danish diet, typically accompanied with a still-warm soft-boiled egg, and some Danish cheese or butter… The Toujis twist is adding cooked rice for that perfectly moist & chewy texture, a mixture of nutritious seeds within the loaf, and serving with olive oil, fresh avocado and either a poached or soft boiled egg.
…A light and creamy squash and potato curry, paired with some sweet, fragrant forbidden rice and savory crispy kale. If you’re on a strict anti-inflammatory cleanse, just enjoy the curry with kale — it is the most satisfying, hearty, and fragrant cleanse-friendly dish you could ever dream of.
This is my take on a traditional Picadillo, a spiced ground meat dish typically served alongside rice. I’ve replaced the traditional red meat with organic chicken, and serve the spiced filling wrapped in a collard green with avocado, chives, pickled veggies, and a super fresh cilantro yogurt dressing.
…This is an amazing treat all year round — a fresh, healthy soup that’s also creamy and comforting — and incredibly easy to make.
…I LOVE this pasta. I call it my “chopped pesto” simply because it has all the flavors of pesto, just without taking the time to make a sauce. Quick, delicious, and much lighter than a typical pesto. It’s the best. I always use a gluten-free pasta (like brown rice or quinoa), and if I want an extra boost of protein, I quickly sauté some garbanzo beans along with the vegetables….
